I have a love, hate relationship with scones. They can often be dry and just not very good. When I make scones, I tend to gravitate towards the savory side of things. I definitely prefer savory or sweet when it comes to breakfast items, with the exception of a weekly pancake or waffle recipe. :) These scones represent everything I love about fall. They also kind of have this apple pie thing going on. I know quite a few of you who like cheddar cheese with your apple pie. These apple cheddar scones are full of savory goodness, but they also have a slightly sweet topping: a combination of turbinado sugar, coarse sea salt, and paprika. Here are some pairings I just love for these apple cheddar scones:
Beer If I were to pair these perfect bites with a beer I would definitely go with a brown ale. I love brown ales this time of year. They have a slightly warming quality, and the go really well with both apples and cheddar cheese. It might be hard to convince some of you to pair a beer for breakfast, but hey, I think the weekend is the perfect time to do so!
Brunch While I could eat these little cuties anytime of the day, I love them for a weekend brunch. They would go well with so many amazing brunch recipes, and I could probably go on and on forever. I would definitely go with a fall-themed brunch. I would start with these scones and pair them with an omelet recipe and a seasonal veggie. You could definitely go all out and pick a recipe from this jumbo list of brunch recipes, but if you want to keep things simple, I definitely suggest the recipes above.
Apple Cheddar Scones with a Crusty Paprika Topping
Preheat your oven to 375 degrees F and line a large baking sheet with a silicone baking mat or parchment paper. Set aside.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the butter and work it into the dry ingredients with your fingers until it is sufficiently broken up. Fold in the apples and white cheddar cheese. Add the buttermilk and combine the ingredients until thoroughly combined.
Taking a two tablespoon-sized scoop form the dough into 12 scones. Dollop them onto the prepared baking sheet. Place the pan in the refrigerator to chill for 20 minutes.
While your dough is chilling, combine the egg and water to create an egg wash.
When the scones are finished chilling, remove them from the fridge and brush each one with egg wash. Sprinkle each scone with turbinado sugar, paprika, and coarse salt.
Place the pan in the oven and bake for 20-25 minute or until brown and cooked through. Test one of the scones with a toothpick. If it comes out clean, they are done.
Serve the apple cheddar scones immediately, or store them at room temperature for about 2 days. Enjoy!
