Once in a while, I just want a really good salad. This chopped chicken salad combines some of my favorite salad ingredients. I'm a sucker for a combination of fruits and veggies when I make a salad. I think it's that touch of sweetness I crave from the fruit that gets my wheels turning. From blueberries and strawberries to cabbage and cucumber, this salad has it all. It's topped with a homemade cashew butter honey mustard that may just be the simplest salad dressing you will ever make. The sky i ...

I've been throwing sprinkles on everything here lately. I have to admit, my addiction to them has gotten a little out of control. I think they just get cuter with each and every year, so I apologize that this Valentine's Day theme has been taking over Cooking and Beer. This will change after Friday, I promise. Any-who, along with my obsession with sprinkles comes my obsession with breakfast food. Maybe it's the low temperatures and the comfy, cozy feeling you get from eating breakfast food (it's ...

Uhh, you guys...these tacos...I can't even begin to explain how insane they were. It was a spur of the moment decision for me to make Thai chicken tacos yesterday. It's been a while since we had a taco, and the craving was totally there. They ended up being one of the simplest, most satisfying meals I've made in a long time. We also have enough leftovers to probably feed us for the rest of the week, so that is, of course, a great bonus. The peanut vinaigrette is much lighter than other peanut sa ...

I am definitely coming down with something. I blame Zach. He left here with a super annoying head cold, and I think that it finally caught up with me. This is no fun as you can imagine, and I can see a day of lounging in bed with a nice hot cup of tea. First things first...let's talk egg salad. I made this salad earlier this week, and it was gone in a day. Did I mention that it's just me here? Yup, I ate a 6-egg, egg salad in one day. It was just soooo good, and I didn't feel one bit guilty eith ...

Well, it's day two of Zach being away, and I've spent the entire time cooking and baking. You would think I would do this when Zach is around because at least there would be two of us to eat all of the food sitting around. Cooking and baking kills time though, so if I get fat for a week, I'm not going to complain. Today I made waffles, and I was going to wait a day or two to post this recipe, but I thought that it was too good not to share immediately. These waffles blew me away. I tried to keep ...

I'm on my own for a week. Zach is in Atlanta, and I'm already bored. Sure, there's that whole thing called the "Superbowl" on tonight, and yeah it will be fun. I've already made myself enough snacks to feed 12 people. Did I mention that it's only me? It's ok. January is over, and February is all about splurging once again. As a result of it being my first day on my own, I decided to make donuts and catch up on all of the TV shows I don't like to admit that I watch while Zach is around. =) I won' ...

Because of the disaster that was the beginning of this week, cinnamon rolls decided to add themselves to my menu. They were necessary...completely necessary. They also did their job perfectly. Half of them are gone already, and I may or may not have eaten three of them in one sitting after they popped out of the oven yesterday. I'm not complaining. They were mandatory...in my mind, they were mandatory. Anyway, cinnamon rolls are great, if you can wrap your head around them. They usually aren't t ...

It has been quite the stressful week already. Do you ever have one of those days where nothing seems to go as planned? Well this was my yesterday...from start to finish. I went to bed at 7pm as a result. I know, I know. Those recorded Grammy Performances weren't going to watch themselves. I try to follow a strict schedule each week when it comes to blogging, cooking, and photographing. Yesterday was a mess. Nothing was working out as it should, and the lighting was horrible. As a result, I have ...

I thought I might take a break from sweet treats. It seems like that's all I've been doing this week! We are still quite a ways from Valentine's Day, but I just couldn't help myself. Check out my Vanilla Cupcakes and Red Velvet Soft Sugar Cookies if you haven't yet! They are full of Valentine's Day deliciousness. So anyway, to lighten things up, I threw this Mediterranean olive couscous salad into the mix. No, I did not combine this with the sweets. I promise. I merely whipped up this salad to b ...

This recipe is a play off of my Lofthouse Copycat Soft Sugar Cookies. Those cookies came out spectacular, so I knew these red velvet soft sugar cookies would do the same. It's an adjustment that actually worked, and I'm super excited about it! Just like the lofthouse copycat cookies, these cookies are soft, yet firm. What's so great about these cookies, and other sugar cookies like them, is that the sky is the limit on how you can decorate them. This makes them a great activity for your kiddos. ...
