As Zach and I prepare to move, I keep coming to the realization that I have an insane amount of work to do. Maybe it's the cool temperatures that have me craving so many sweets lately. I can't keep my hands off of them! I have a small confession to make, I don't LOVE kale. Sure, I'll eat it, and I do often cook with it; but all by itself, I could live without. I do enjoy it in the occasional smoothie, when it's pulverized. I also enjoy it in these egg muffins. Kale adds that freshness you really desire in this quick breakfast snack. Every once in a while Zach asks me to make cookies, and when he does, it's ALWAYS chocolate chip.
