Are you sad that 10 days of pumpkin is over? I certainly am. I know that I just told my family and friends a couple of days ago that I'm pretty much pumpkined out. I take that back now. I'm still totally craving pumpkin. I'll give myself a break though, just for now =). So, Zach starts his new job on Tuesday. We are super excited about it for many reasons, and the most important reason is that it's "permanent." We are certainly blessed, and he has worked very hard to get where he's at, so YAYYYY ...

So that's it everyone! I hope everyone has just as much fun as we did whipping up these great pumpkin recipes. There are some things to know before you start cooking because I'm sure all of you will be making all of these recipes? Right? I will believe it even if it's not true =). I used canned pumpkin puree this year. This is mostly because I started creating these recipes before pie pumpkins hit the shelves. However, I have seen a couple of the big box stores put pie pumpkins out this past wee ...

Last year, Zach made these delicious Pumpkin Pinwheel Cookie Sandwiches. We decided to tackle this recipe again, but in a different way. This time we eliminated the "sandwich" and made them a traditional pinwheel cookie. They are spectacular either way you choose to make them. Obviously, the recipe we are sharing today is just a tad easier. There's just something about a pinwheel cookie. We tend to make them a lot. I think part of the reason we love them so much, is that you can incorporate just ...

Macaroni and cheese of any kind is always a favorite around here. What I love about macaroni and cheese is that you can put just about any spin on it and make it delicious. I have had butternut squash mac and cheese in the past, so I had a feeling that pumpkin would work just fine. I couldn't have been more right. I always have a problem with mac and cheese where it's never creamy enough for me. No matter what I do, it's just never creamy enough. Well this time was completely different. I really ...

We couldn't go through this 10 Days of Pumpkin series without making pumpkin doughnuts at some point. Doughnuts (or donuts) are like anything else out there. Once in a while you just crave one, and I'm not talking about the "healthier" baked version either. I'm talking about a really good, deep fried doughnut. Hey, if I'm going to eat a doughnut, I may as well EAT a DOUGHNUT. Are you catching my drift? Ok. So this recipe was surprisingly easy to tackle. I had my doubts. Besides the occasionally ...

I don't know a soul out there who doesn't absolutely adore monkey bread. It's gooey and sweet, messy and delicious. It's a favorite among most. I don't know this for sure, but I can speculate. When I found out that Zach has never had monkey bread, I almost had a panic attack. Not kidding. I may have cried for him for just a minute (not really, but I wanted to). Therefore, I had to make monkey bread; but because there are only two of us, I decided to go the monkey bread muffin route instead. And ...

Zach and I are suckers for a good mole sauce. Just a couple of weeks ago we visited Salt Lake City and ate at Red Iguana one night for dinner. We were in mole heaven! If you are ever in the Salt Lake area check out one of their restaurants. Their food is extremely affordable and absolutely delicious. Moles don't have to be sweet, but that's just the way Zach and I like them. Because we are on Day 6 of our 10 Days of Pumpkin series, I thought I'd give a pumpkin-ancho mole sauce a whirl. Toasted p ...

I learned a few things today. Number one: biscotti are delicious (well I kind of knew this already). Number two: pumpkin biscotti are even more delicious (ESPECIALLY with hazelnuts). Number three: who knew that you probably have all of the ingredients for biscotti hiding inside your pantry?! I don't know why I never realized this. I make biscotti all the time. These cookies can seriously be baked without even going to the store. Of course, you have to have all of the necessary pantry staples: fl ...

I'm sorry I've been MIA for the past two days. There is this little thing called "flash flooding" going on all around us. Let's just say it's been a scary and insane week. Unfortunately, we are in for round 2 in the next 24 hours and the rain just doesn't seem to want to stop. I've tried to explain to family and friends that we hardly ever get any rain. They don't seem to want to believe me. Ha! With that being said, we are still currently hiding out in our townhouse (which thankfully is a 3 sto ...

So, if you haven't noticed or you have been living in a hole for the past 24 hours, we have been getting pummeled with rain. There is flooding occuring all over the front range of Colorado. Buildings and roads are collapsing. People are being evacuated; and it's just plain scary. This being the case, we of course decided to stay inside today. Which is fine by me on such a gloomy day, and gives me the chance to whip up some great pumpkin recipes. Our house is filling up with pumpkin(y) sweets ver ...
