I thought I might take a break from sweet treats. It seems like that's all I've been doing this week! We are still quite a ways from Valentine's Day, but I just couldn't help myself. Check out my Vanilla Cupcakes and Red Velvet Soft Sugar Cookies if you haven't yet! They are full of Valentine's Day deliciousness. So anyway, to lighten things up, I threw this Mediterranean olive couscous salad into the mix. No, I did not combine this with the sweets. I promise. I merely whipped up this salad to b ...

So, let's highlight the flavors of summer just ONE more time before the season comes to an end; and make a fresh salad where the peach is the star! You really have to savor these moments! They will be gone in a jiffy. Did I just say "jiffy?" OH my. Anyway, I really loved this salad. I also really love peaches, so this might be why I love the salad so much. In this recipe, I really wanted the peach to shine, so I tried to tone down the amount of other ingredients I would use. This salad is perfec ...

As Summer draws to a close (kind of -- we still have a little less than a month left), Labor Day is like the "last hurrah" for most of us. It allows for one last "event" to celebrate all things Summer. I personally love Labor Day, and it's not just because my birthday SOMETIMES lands on the holiday. It's September 6th by the way. I like shoes and nifty kitchen appliances. Anyway, I thought it only appropriate to have fun with my post today, and the only way to do that was to compile some of my f ...

So we've decided to go back down this lovely road called "pulled pork road" once again. We had a pork shoulder just hanging out in the freezer, so it was about that time. The problem with trying to feed two people with one pork butt (or pork shoulder --- same thing) is that you will eat it for days, and then you will get sick of it and have to wait 2 months until you even set eyes on the darn stuff again. Don't get me wrong, pulled pork is absolutely delicious, but just like anything else: too m ...

I find that ice cream brings joy to just about anyone (unless you are allergic to dairy =( this is sad -- there are cool alternatives though!), even if that dreaded Monday is upon us. I thought this ice cream was the perfect recipe to share on this beautiful Sunday, especially since the end of the Summer is upon us. Well actually, it's really not quite the end. I think we all seem to forget that Summer goes until the end of September! I guess for those of you who have kids, Summer has a differen ...

There's not a whole lot better than the fresh flavors of summer. The end of summer/early fall is by far my favorite time of the year for fresh fruits and veggies here in Colorado. I know what you are thinking. We live in an area with a semi-arid climate. How does anything grow here!? Well, if you were wondering (you probably weren't, but whatever), it does! We also have some great irrigation systems to keep those fruits and veggies perfectly watered and growing =). I know I've talked about the a ...

Let's be honest, you can't really go wrong with chips and salsa. Almost everyone loves the combo, and it's almost always found at get togethers. I think salsa is great for a tailgate. It's simple to make. It keeps in the refrigerator for a day or two, so you can make it a day in advance. It tastes just find at room temp. Everyone loves the stuff, and there's always the opportunity to put your own spin on it. Peaches are in season here in Colorado...I may have mentioned this a gazillion times. We ...

So I decided to hit 2 birds with 1 stone with this recipe. Per my sister's request (she's visiting by the way), cannolis were on the menu. However, I don't believe cannolis go very well with my theme for the week - "The Best Ever Tailgate Recipes." Who knows if this dip even belongs in that category, but I'm making it work because it's delicious and also great for a large crowd. It's also seriously one of the easiest recipes you will ever try to tackle. Tackle...football...get it? No? Ok...So wi ...

Mmmmmmm...Ice Pops...Just the sound of "ice pop" gets my heart-a-racing. I'm such a baby when it comes to the darn things. I'll only buy two off the shelf products out there...Fruttare and Dreyer's Outshine (or Edy's if you are on the East coast). Which by the way, this still has yet to make sense to me. It's like Best Foods and Hellmann's. IT'S THE SAME EXACT THING! WHY MUST WE HAVE TWO NAMES?! Anyway. Yes, these bars are pretty spectacular. They are also easy. No work involved, but there is so ...

So Zach made this incredible habanero, honey and orange sauce while I was away in May; not that I would know that it was incredible since I didn't get to try it, but I obviously took his word for it. We decided to have another go at it (mostly because I wanted to try the sauce) and use it in a different way. Instead of spreading it on tacos, we decided to smother chicken in the stuff; and when I say smother, I really mean smother. It was grilled to perfection and was the perfect summer's evening ...
