Zach is a sucker for boneless, skinless chicken thighs, as am I. When they go on sale, forget about it. We stock up for decades. I feel like boneless, skinless chicken thighs are always second to chicken breast though. Personally, I think they have a ton more flavor and are wayyyyyy more delicious. I feel bad for them sometimes. =( Really, I do. But anyway, this isn't a memoir about my love for chicken thighs. This recipe is delicious. There's no way around it. It's simple and quick and can be o ...

I find that I come up with the best snacks when I have a bunch of food in the fridge I need to get rid of. These skillet nachos just happen to be a perfect solution to this little problem. I had half of a pork shoulder I needed to use up. -- If you are wondering why there was half a raw pork shoulder left in my fridge, well the original pork shoulder was a gazillion pounds. With just Zach and I living here, there was no way that we were going to be able to eat a gazillion pounds of pork in just ...

You can't have the Superbowl with wings, and you can't have wings without the Superbowl. Well, actually that's not quite true. You can have wings all year round, and it would be totally ok. Let's just say that wings are 100% necessary on game day. They are the perfect indulgence. Wings are great because you can feed a lot of people for a little amount of money and effort. Instead of making the traditional buffalo wing this past weekend (the one with the Frank's Red Hot and butter ... which is al ...

As promised, here is my first healthy recipe of the New Year. I told you it was going to happen! Shame on you for doubting ;). Just kidding. So anyway, I made these Thai-style turkey meatballs last week, and they were a huge hit among Zach and my dad. They were gone so quickly! There are many great things about this recipe. First of all, it's extremely quick and easy. These meatballs can be on the table in less than an hour. It's the perfect weeknight meal. Serve it with some greens, rice or qui ...

These little balls of garlic(y) and spicy sweetness are one of a kind. This is quite possibly the best brussel sprouts recipe ever! Ok, maybe I'm jumping ahead of myself just a bit, but they really are delicious. Brussel sprouts are just one of those veggies that I think need a little bit of help in the kitchen. Maybe this is because I don't LOVE them by themselves. Toss them with bacon, brown sugar and sriracha though, and I am sold on the idea that is the brussel sprout. With these ingredients ...

We've dabbled in sweet potato mashes quite a lot around here. Sweet potatoes are amazing. They are so versatile. They can be sweet, savory and even spicy! This is exactly what we did for this recipe. We combined all three elements! I like your traditional sweet potato casserole served at Thanksgiving with all the goodies layered on top: brown sugar, maple syrup, and marshmallows; but I wanted something different to serve this year. A couple of months ago we made a creamy sweet potato mash via ou ...

This soup blew our minds. Blew...our...minds. Maybe this was because I was expecting it not to come out so great. So glad that didn't happen! Really though, this soup will blow your mind. It is surprisingly simple. It's literally a "one-pot-meal," and I don't know about you, but I really like the sound of a "one-pot-meal." This is especially true on the weekends, when you know you don't feel like cooking an elaborate meal, but still want something delicious. Now, just because this is a Thai-styl ...

We are really in an Indian flavor type of mood here lately. I'm not really sure why. We just tend to crave the stuff every once in a while. I like this recipe. A...LOT. It's simple. It's inexpensive. It's delicious. Do your really need any more reason than that? This is actually our second night in a row eating it. Yup...that good. It's amazing what you can whip together. You really only need some chicken and every single spice to ever hit the shelves of your grocery store. It's ok though. It's ...

Zach and I are suckers for a good mole sauce. Just a couple of weeks ago we visited Salt Lake City and ate at Red Iguana one night for dinner. We were in mole heaven! If you are ever in the Salt Lake area check out one of their restaurants. Their food is extremely affordable and absolutely delicious. Moles don't have to be sweet, but that's just the way Zach and I like them. Because we are on Day 6 of our 10 Days of Pumpkin series, I thought I'd give a pumpkin-ancho mole sauce a whirl. Toasted p ...

I'm sorry I've been MIA for the past two days. There is this little thing called "flash flooding" going on all around us. Let's just say it's been a scary and insane week. Unfortunately, we are in for round 2 in the next 24 hours and the rain just doesn't seem to want to stop. I've tried to explain to family and friends that we hardly ever get any rain. They don't seem to want to believe me. Ha! With that being said, we are still currently hiding out in our townhouse (which thankfully is a 3 sto ...
