I find that I come up with the best snacks when I have a bunch of food in the fridge I need to get rid of. These skillet nachos just happen to be a perfect solution to this little problem. I had half of a pork shoulder I needed to use up. -- If you are wondering why there was half a raw pork shoulder left in my fridge, well the original pork shoulder was a gazillion pounds. With just Zach and I living here, there was no way that we were going to be able to eat a gazillion pounds of pork in just ...

Please don't judge me. I know, I know...pulled pork once again. What can I say? There are literally only two of us living here (if you don't count Cilantro -- we try to keep him as far from people food as we possible can). A pork shoulder goes a LONG way, and it's not as easy as you may think to find a small one. I love it, but like I mentioned yesterday, I'm pretty much over it now =). It was great while it lasted though! I PROMISE you that there will be a different kind of recipe up on Thursda ...

So we've decided to go back down this lovely road called "pulled pork road" once again. We had a pork shoulder just hanging out in the freezer, so it was about that time. The problem with trying to feed two people with one pork butt (or pork shoulder --- same thing) is that you will eat it for days, and then you will get sick of it and have to wait 2 months until you even set eyes on the darn stuff again. Don't get me wrong, pulled pork is absolutely delicious, but just like anything else: too m ...

There's not much better out there than mac and cheese. It's so rich and comforting and perfect for a cool day. Yes, I know. It's still August, but we were all craving some mac and cheese, so we went ahead and whipped up a batch anyway. Growing up, my dad always made the absolute best mac and cheese. I have a very hard time maintaining that creamy consistency when I bake it. His mac and cheese is ALWAYS creamy. I don't know how he does it! Mind boggling. Oh well, this mac and cheese was still pre ...

I've decided to finish this week of tailgating recipes on an easy note. Not that the other recipes aren't super easy, but you really don't get any easier than a good sandwich. I really like sandwiches for tailgating. I especially like the mini versions of sandwiches. This gives your guests the chance to chow down on the other great dishes that you will undoubtedly have at your tailgate =). These sandwiches can either be made ahead of time or fixed up once you get to the tailgate. This also makes ...

So it begins. I may have mentioned yesterday that I slow-cooked a pork shoulder roast on Sunday, so we will officially be eating pork for the next week. I mean there's only two of us and this roast was over 7 pounds! It's really horrible of me to complain though. The pork came out so delicious, and I knew that for my first dish I had to go above and beyond just a regular pulled pork sandwich. In today's post we put together a pulled pork grilled cheese. Who knew that grilled cheese can taste eve ...

Baked beans have certainly grown on me over time. When I was small, I would do everything in my power to not touch the stuff, but with age I gained some wisdom along the way; and I finally discovered the beauty that is the baked bean. I love love love this recipe, and I'm so happy to share it with all of you. I think the key with this recipe was to develop great flavors. With a little bit of spiciness, yet a little bit of sweetness, this recipe is sure to please at your next BBQ. Sweet and savor ...

Hi everyone! It's been so long! Really, it has been way too long. I'm so sorry for my absence these past two weeks. Everything has been out of control crazy. I am currently visiting family in NJ, but I haven't forgotten about all of you. As you may have noticed, I delegated some tasks out to Zach this past weekend and he totally didn't disappoint! I was actually pleasantly surprised on some of the creative recipes he was able to whip up; especially his Patriotic Peanut Butter Cookies. He literal ...

When I think of tacos, I think of something that just melts in your mouth and makes a huge mess. My Dad used to always say, "The messier the better". This statement seems to hold for tacos all the time. Hence, I bring to you the ultimate pork taco packed with three different sauces just to keep your taste buds in a constant state of confusion while you attempt to prevent the delectable taco from falling onto the plate. Don't be afraid of these tacos though since the sauces are actually quite mil ...

Yup, that's right you heard me...BLT soup. This soup was divine, just divine. It's everything you could want in a BLT sandwich, but in the form of a soup, and it was just delicious. Did I mention it was divine? Well it was...if you were wondering. So anyway, it's been kind of rainy here lately. This is strange, since it never rains; and if mother nature decides she wants to precipitate, it usually means it's going to snow. Rain is totally a good thing, so I'm not complaining TOO much...yet. If i ...
