I really crave salads as warmer months approach, and I was really craving a chopped chicken cobb salad. I love a cobb salad, mostly for the hard-boiled eggs, but also for all the ways you can get creative with it. I like to add absolutely everything, but the kitchen sink in my cobb salads. Zach is a sucker for boneless, skinless chicken thighs, as am I. When they go on sale, forget about it. We stock up for decades. So how many of us are excited that it's Monday?! Not. I miss the weekend already. Uhh, you guys...these tacos...I can't even begin to explain how insane they were. It was a spur of the moment decision for me to make Thai chicken tacos yesterday.
