Once in a while, I just want a really good salad. This chopped chicken salad combines some of my favorite salad ingredients. I'm a sucker for a combination of fruits and veggies when I make a salad. Something I find extremely difficult to do is to make sure I get enough calories in me when I'm running a lot. I made it a personal goal this year to make sure that I run as much as possible. I seriously was a humongous slacker last year, and I won't let it happen again gosh darn-it!
