Once in a while, I just want a really good salad. This chopped chicken salad combines some of my favorite salad ingredients. I'm a sucker for a combination of fruits and veggies when I make a salad. I think it's that touch of sweetness I crave from the fruit that gets my wheels turning. From blueberries and strawberries to cabbage and cucumber, this salad has it all. It's topped with a homemade cashew butter honey mustard that may just be the simplest salad dressing you will ever make. The sky i ...

Something I find extremely difficult to do is to make sure I get enough calories in me when I'm running a lot. I made it a personal goal this year to make sure that I run as much as possible. I seriously was a humongous slacker last year, and I won't let it happen again gosh darn-it! Smoothies are huge for me when I'm running a lot, and I always try to have a large one after I've finished exercising. A great ingredient to add into smoothies is cooked oatmeal. Oatmeal is full of nutrients and per ...

As promised, here is my first healthy recipe of the New Year. I told you it was going to happen! Shame on you for doubting ;). Just kidding. So anyway, I made these Thai-style turkey meatballs last week, and they were a huge hit among Zach and my dad. They were gone so quickly! There are many great things about this recipe. First of all, it's extremely quick and easy. These meatballs can be on the table in less than an hour. It's the perfect weeknight meal. Serve it with some greens, rice or qui ...

We are really in an Indian flavor type of mood here lately. I'm not really sure why. We just tend to crave the stuff every once in a while. I like this recipe. A...LOT. It's simple. It's inexpensive. It's delicious. Do your really need any more reason than that? This is actually our second night in a row eating it. Yup...that good. It's amazing what you can whip together. You really only need some chicken and every single spice to ever hit the shelves of your grocery store. It's ok though. It's ...

I love the flavors of summer and this salsa totally embodies the flavors of summer. I seriously wish that some of these tropical fruits were hardy enough to grow in our "rough" climate because I would certainly have some kind of tropical fruit orchard growing right now. Oh well, you can't have everything. This salsa is so versatile. We plan on putting it on curry turkey burgers tonight (post up tomorrow), but you can really do just about anything with it. Like most other fruit-based salsas, this ...

Hi everyone! It's been so long! Really, it has been way too long. I'm so sorry for my absence these past two weeks. Everything has been out of control crazy. I am currently visiting family in NJ, but I haven't forgotten about all of you. As you may have noticed, I delegated some tasks out to Zach this past weekend and he totally didn't disappoint! I was actually pleasantly surprised on some of the creative recipes he was able to whip up; especially his Patriotic Peanut Butter Cookies. He literal ...

Grits have to be one of the most magical foods on the planet. That's right, magical is really the only word to describe them. They are especially magical when you pack them full of cheese and bacon =), and that is just what we did! You seriously can not go wrong with the amazingness that is cooking grits. Number one, they are almost impossible to screw up. I really don't need to go any further than that, but I will because I want to. Number two, you can literally eat them any time of day. By usi ...

So, I've been wanting to pair beer and cheese together for a long time. I just really haven't had the opportunity to do so. Since Zach and I only have 4 more days left in our current home and are packing like crazy, I thought that my love of cheese boards would be the best thing to tackle this week. By the end of day today, I plan on having most of the kitchen packed up! Have I mentioned that I am beginning to hate packing. Like really really really hate it...Anyway, back to cheese board: they a ...

Few things go better together than prosciutto and fruit, especially melon. Now, I know that it is yet to be "melon season," but I just couldn't help myself. The sweet and salty combination was calling my name, and I'm not talking about chocolate covered pretzels. Although, that does sound incredible right now. Hmmmm, maybe after we move. I don't want to get too over ambitious just yet, especially when all of my kitchen "equipment" is starting to get packed away =(. Soon, all I will have left is ...

It's really not as easy as you think it might be. I'm sure at least once in your life you have hard-boiled or soft-boiled an egg. The difference between the two is just as it seems. Soft-boiled eggs are just cooked for less time and the yolk isn't as hard as in hard-boiled eggs. For the sake of keeping things simple and keeping myself sane, I'm just going to refer to them as "hard-boiled," since this is my preference and this is how we cooked them. Anyway, in the past, I never had problems hard- ...
