Brie is a guilty pleasure of mine. It just is. You can give me an entire wheel of brie, and I will finish it in one sitting. I really can't help myself when it is smothered in honey and figs, berries and peaches (recipe coming soon), or in this case, grilled corn and mango salsa. Happy hump day everyone! I hope you guys are having a fabulous week. The week seems to be flying by doesn't it? At least around here it seems to be that way. I know what you are thinking. Why am I sharing a recipe inspired by ginger? Ginger is a fall ingredient. I know this. I really do, but I really think this recipe (despite the insane amount of ginger) is really great for summertime. For one thing, it's chilled.
