Let's be honest with ourselves, grits have to be one of the most amazing dishes on the planet. I love them all ways, especially when they are mixed with a ton of cheese! This particular recipe just happens to be vegetarian (I know ... it doesn't happen very often) and packed with goat cheese and garlicky goodness. I'm all about the alliteration today. Can you tell? Grits are easy and quick. They are the perfect meal when you are on a budget, and they are even more perfect when they are topped wi ...

I really crave salads as warmer months approach, and I was really craving a chopped chicken cobb salad. I love a cobb salad, mostly for the hard-boiled eggs, but also for all the ways you can get creative with it. I like to add absolutely everything, but the kitchen sink in my cobb salads. This was the perfect meal to get Zach and I through a week of packing. It's been an insanely busy and tiring week. Luckily, it's almost over. We are officially moved out of our townhouse. This was bittersweet, ...

Zach is a sucker for boneless, skinless chicken thighs, as am I. When they go on sale, forget about it. We stock up for decades. I feel like boneless, skinless chicken thighs are always second to chicken breast though. Personally, I think they have a ton more flavor and are wayyyyyy more delicious. I feel bad for them sometimes. =( Really, I do. But anyway, this isn't a memoir about my love for chicken thighs. This recipe is delicious. There's no way around it. It's simple and quick and can be o ...

I hope everyone had a FABULOUS weekend. It was gorgeous here in Colorado. It was sunny and in the 70s. The peaks were covered in snow, and it was one of the best views of the Front Range I've seen in quite a while. I pretty much spent my Sunday packing some things up around the house. We are getting closer and closer to the big move! Eek! So exciting! So anyway, let's talk food, shall we? I know I have talked endlessly of this, but I get so much satisfaction when I can eat something lemony! Unfo ...

Here is another instance where I decided to cook with beer. I know! That's twice in one week! I don't know what to make of this, but let's just go with it. This won't become a common occurrence by any means, but it's fun to go crazy once in a while. So anyway, as I dive into this new thing called "cooking with beer," I thought that biscuits would be an easy way to not screw up. Boy, did I not screw up. It's fun when things go the way that you plan. These biscuits are a play off of my Rosemary an ...

BLTs are one of my favorite comfort foods of all time. What makes them so different from other comfort foods is that they can be whipped up in no time. This, I love. This is my fun spin on a traditional BLT. I am OBSESSED with burrata lately. When it comes to cheese, it's all I can think about; and now that we have a Trader Joes (FINALLY!) in the area, I've been able to stock up on burrata for a fraction of the price at other large grocers. For those of you who may have never heard of it, Burrat ...

Once in a while, I just want a really good salad. This chopped chicken salad combines some of my favorite salad ingredients. I'm a sucker for a combination of fruits and veggies when I make a salad. I think it's that touch of sweetness I crave from the fruit that gets my wheels turning. From blueberries and strawberries to cabbage and cucumber, this salad has it all. It's topped with a homemade cashew butter honey mustard that may just be the simplest salad dressing you will ever make. The sky i ...

Uhh, you guys...these tacos...I can't even begin to explain how insane they were. It was a spur of the moment decision for me to make Thai chicken tacos yesterday. It's been a while since we had a taco, and the craving was totally there. They ended up being one of the simplest, most satisfying meals I've made in a long time. We also have enough leftovers to probably feed us for the rest of the week, so that is, of course, a great bonus. The peanut vinaigrette is much lighter than other peanut sa ...

I am definitely coming down with something. I blame Zach. He left here with a super annoying head cold, and I think that it finally caught up with me. This is no fun as you can imagine, and I can see a day of lounging in bed with a nice hot cup of tea. First things first...let's talk egg salad. I made this salad earlier this week, and it was gone in a day. Did I mention that it's just me here? Yup, I ate a 6-egg, egg salad in one day. It was just soooo good, and I didn't feel one bit guilty eith ...

I thought I might take a break from sweet treats. It seems like that's all I've been doing this week! We are still quite a ways from Valentine's Day, but I just couldn't help myself. Check out my Vanilla Cupcakes and Red Velvet Soft Sugar Cookies if you haven't yet! They are full of Valentine's Day deliciousness. So anyway, to lighten things up, I threw this Mediterranean olive couscous salad into the mix. No, I did not combine this with the sweets. I promise. I merely whipped up this salad to b ...
