Do you know what I am absolutely obsessed with lately? Eggs ... eggs on pasta. I could eat eggs in any shape or form, but I really think they compliment a nice pasta dish. Zach was uncertain of this the first time I shoved an egg on top of his pasta. He didn't think the two quite belonged together, but as soon as he tried it, I really think it was love at first bite. Happy Monday everyone! I hope you guys had a wonderful weekend! This being the middle of July (better known to us grilling enthusiasts as "National Grilling Month") and all, I thought that the best way to let summer shine was to prepare one of my favorite summertime salads. Why is it that everything tastes better with an egg on top? I tend to take this method to the extreme and put an egg on just about anything I make. Hey, it's added protein! It can only add to a dish! You guys. Yum. These loaded veggie sloppy joes are like no other. I've never really gravitated towards your everyday sloppy joe.
