Let me just tell you that it has been quite the STRUGGLE getting this recipe written up and published today. I swear the world is against me today. I've been toying with the idea of posting more pumpkin recipes. I love pumpkin. I really, really...really...do, but it gets kind of hard to get creative when social media is on pumpkin overload. I guess I should really call this recipe Homemade "Tater Tots" with Spicy Mayo because I have to say that these tots are one of a kind.
