Zach and I are suckers for a good mole sauce. Just a couple of weeks ago we visited Salt Lake City and ate at Red Iguana one night for dinner. We were in mole heaven! Let's be honest, you can't really go wrong with chips and salsa. Almost everyone loves the combo, and it's almost always found at get togethers. I think salsa is great for a tailgate. Sometimes you just crave a taco, and if you're Zach or I, you crave tacos at least once or twice a week. We've tackled the fish taco, which is always a winner. We've also outdone ourselves with a buffalo chicken taco that was absolutely to die for, but we love buffalo chicken, so of course we almost died for it. Well, it's more like an enchilada pie, but we will get more into that later. I know it sounds weird, but trust me, it's delicious. The original thought process behind this recipe was to use duck, but SURPRISE! No one has duck right now. Well one store had it, but it was about $30 for a small duckling.
