My dad was here for Christmas and just left us late last night. We had such a great time, and we are sad that he his heading back to the East coast. I've tried to talk him into moving to Colorado. So, I'm not going to lie to you. These are heavenly bundles of cheese and carbohydrates, but we all know that we are trying to have that last big hurrah of unhealthy foods before the New Year begins. You can't have a true Italian Christmas without Italian Anisette Cookies, so of course I had to make like 5 dozen of them. I believe that we have discussed my dislike for anise in the past. It's sad. I wish I loved the stuff, but I just can't bring myself to love that licorice taste. I really think that it is an acquired taste, so hopefully (someday), I will learn to love it. So I decided to hit 2 birds with 1 stone with this recipe. Per my sister's request (she's visiting by the way), cannolis were on the menu. Let's talk barley shall we? I really feel bad for the poor little grain. He so often gets the cold shoulder! I feel like the second someone looks at the packaging on raw barley and finds that it has to cook for at least an hour, it's immediately placed back on the shelf. With the cheese board I decided to make today, I went with an unconventional approach and decided to throw a bunch of different cheeses together. Sometimes you just crave a taco, and if you're Zach or I, you crave tacos at least once or twice a week. We've tackled the fish taco, which is always a winner. We've also outdone ourselves with a buffalo chicken taco that was absolutely to die for, but we love buffalo chicken, so of course we almost died for it.
