Za’atar Grilled Carrots are the perfect summer side dish recipe that is loaded with spice and flavor! Multi-colored heirloom baby carrots are cleaned and cut in half. They are then tossed in a mixture of high-quality extra virgin olive oil, lemon juice and a heavy dose of za’atar. Placed in a foil packet, these za’atar grilled carrots are then grilled to a tender perfection. Served with a sprinkling of goat’s cheese and fresh chopped parsley, these za’atar grilled carrots are the perfect side dish to serve at your next outdoor gathering!

So my obsession with za’atar continues. You probably seem to recall this spicy za’atar grilled chicken I made a couple of weeks ago. It’s all about the za’atar you guys. You should probably know by now that when I become obsessed with an ingredient, I tend to post a gazillion recipes with it. I go a little crazy, and then I get sick of it. This usually happens at least 3-4 times a year, and then you won’t see another recipe with such ingredient until months later.

Za’atar however, I don’t think I will ever get sick of za’atar. It is my new go-to herby blend that I just can’t get enough of. I’ve literally been putting it on everything you guys. EVERYYYYYYYYYTHING.

These za’atar grilled carrots are just the latest recipe to utilize fragrant za’atar. These carrots were gracing the produce bin of my local supermarket and they looked so incredible that I couldn’t pass them up. Do you guys ever do this? There is no plan in mind. You just see a veggie and you have to have it. The creative part will come later. This happens all the time for me. Zach hates when I come back from the grocery store. I NEVER stick to the list.

Make these za’atar grilled carrots for your next outdoor gathering. Served alongside some golden sweet summer corn and a grilled steak, and it will be a plate full of summer scrumptiousness. Don’t forget the beer, either! I would highly suggest pairing these za’atar grilled carrots with an IPA. It will really bring out that herby flavor. Enjoy the rest of your weekends friends! Za’atar Grilled Carrots

Ingredients
  

  • 1 pound multi-colored heirloom carrots cleaned and cut in half
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon za'atar herbs de provence may be substituted
  • salt and black pepper
  • 2/3 cup crumbled goat's cheese
  • 2 tablespoons chopped parsley

Instructions
 

  • Preheat your grill over medium-high heat.
  • In a large bowl, whisk together the oil, lemon juice, za'atar and a generous of amount of salt and black pepper. Add the carrots to the bowl and toss to coat.
  • Lay out a large piece of heavy duty foil. Place the carrots in the middle, and seal up on all sides. Crumble the top to seal.
  • Place the package on the grill and cook for about 15-20 minutes or until the carrots are tender. Remove from heat and transfer the carrots to a serving platter. Sprinkle the carrots with goat's cheese and fresh parsley.
  • Enjoy immediately!
