Extra Cheesy Party Crostini (with bacon)

My dad was here for Christmas and just left us late last night. We had such a great time, and we are sad that he his heading back to the East coast. I’ve tried to talk him into moving to Colorado. I feel like I’m making some headway, or maybe that’s just happening in my mind. ;) I’d like to think that he would move out here someday! So anyway, with his visit, he brought one of my favorite little snacks. They aren’t anything crazy. They are insanely easy to make, but they are soooo scrumptious and addicting. They are simple. They are little toasts topped with cheese, bacon, a little bit of mayo and some extremely necessary seasonings. They are perfect for a soiree or gameday as they don’t take up very much of your time to make…and if you are me, then you will just end up making them for yourself as you cuddle up on the couch. I highly recommend whipping up a batch for your next get together. They will be gone in seconds!

Recipe Fun Facts:

I don’t have much to say about this recipe because it really is that easy. Feel free to buy your crostini already toasted up. We like to make them from a fresh baguette, but this isn’t necessary if you don’t have the time. If we are toasting them up ourselves, we pop them in a preheated oven. You can most definitely place them under the broiler if you wish. Just be careful because if you are anything me, I tend to burn the toast every time I place it under the broiler. I may or may not have caught a few things on fire over the years. Toast is so not my thing.

Description: I personally love this barley wine. The sad part arose when I found out that Brooklyn no longer brews it. You can still grab a bottle or two at some special liquor stores across the country. I don’t know if they were just holding onto it for safe keeping or what. If you happen to have a bottle lying around or are able to still pick up a bottle, I highly recommend it; otherwise, any other English Barley Wine you can come across will do the trick. Barley wines pair very well with cheese(s). Maybe it’s because of their “wine-like” qualities. It’s citrusy and fruity. It’s the perfect sipping beer and perfect with this appetizer.
